Scallop Night

One thing we both LOVE is scallops. We will pretty much eat them anyway you can think of. This recipe from the james Beard Foundation is one of the best that I’ve had. Pairs the sweet lil muscles with creamy cheese which most would say is a no no….but its really a YES YES! Then we pair a spice dusted scallop with a cool refreshing watermelon salad and some salty pickled watermelon rind. I know it sounds weird but you gotta try it before you knock it. Lastly is a classic ceviche that really plays on the texture of the scallop. Here is the recipe link:
